Delicious Vegetarian Tofu Stir-Fry

Delicious Vegetarian Tofu Stir-Fry (Serves 3)

Ingredients:

  • 1 block (400g) firm tofu, drained and cubed
  • 2 tablespoons olive oil (or any preferred cooking oil)
  • 1 large carrot, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons tamari (gluten-free soy sauce)
  • 2 tablespoons maple syrup
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 2 tablespoons sesame seeds
  • 2 green onions, sliced
  • Salt and pepper to taste

Method:

  1. Prepare the Tofu:
    • Press the tofu to remove excess moisture. Cut into cubes.
    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add tofu and cook until golden brown on all sides, about 10 minutes. Remove from the skillet and set aside.
  2. Prepare the Vegetables:
    • In the same skillet, add the remaining olive oil.
    • Add minced garlic and ginger, sauté for 1-2 minutes until fragrant.
    • Add the carrots, bell pepper, broccoli, and snap peas. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.
  3. Make the Sauce:
    • In a small bowl, whisk together tamari, maple syrup, rice vinegar, sesame oil, and the cornstarch slurry.
  4. Combine and Cook:
    • Return the tofu to the skillet with the vegetables.
    • Pour the sauce over the tofu and vegetables. Stir well to coat.
    • Cook for another 2-3 minutes until the sauce thickens.
  5. Garnish and Serve:
    • Sprinkle sesame seeds and sliced green onions over the stir-fry.
    • Serve immediately in a large bowl.
